Delicious Lemon Roasted Onions
DELICIOUS LEMON-ROASTED ONIONS
2 large red onions
2 large Vidalia onions
½ c. Marzetti Simply Dressed Vinaigrette-Lemon
1 T. Dijon mustard
1 T. minced garlic
Salt, black pepper
Extra virgin olive oil
Freshly chopped parsley, garnish
- Preheat oven 375. Line a baking sheet with foil and spray with PAM.
- Remove the stem end of each onion (top) and carefully slice the bottom part of the root end, leaving the root intact. Peel the onion.
- Stand each onion root end up on a cutting board and cut onion into 4 wedges.
- Place the wedges in a large bowl.
- Drizzle with olive oil and season with salt and pepper.
- In a small bowl, combine the vinaigrette, mustard and garlic. Whisk until blended.
- Take the onions and spread on the baking sheet.
- Drizzle the vinaigrette mixture all over the onions. With your hands, mix so that the whole onion wedges are coated.
- Bake in oven for 30-45 minutes or until tender and browned. Toss once during the cooking process.
- Remove from oven and with a slotted spoon, mix the onions but try not to break them up. You want to get some of the dressing back on the onions.
- Sprinkle with more salt and pepper if needed and garnish with parsley.
*Can be served hot or room temperature. A nice change!
