Comforting Broccoli Casserole
Ingredients
  • 1 lb. fresh broccoli, cut into pieces
  • 1 (10.75-oz.) can cream of mushroom soup
  • 2 large eggs, lightly beaten
  • 1 c. Miracle Whip or Mayo
  • 1 ½ c. shredded Cheddar cheese, extra to sprinkle over top
  • 1 stick butter, cut into pieces
  • Salt, black pepper, garlic powder, to taste
  • 1 sleeve Ritz crackers, crushed (1/3 of a 12-oz. box)
  • Paprika
Instructions
  1. Preheat oven 350.
  2. Spray 13x9” baking dish with PAM.
  3. Steam broccoli until crispy-tender.
  4. Transfer to bowl of ice water.
  5. Mix soup, eggs, mayo, cheese, butter, salt, pepper, garlic powder in saucepan over medium heat.
  6. Stir constantly, until melted and combined.
  7. Drain broccoli. Spread in baking dish.
  8. Pour cheese mixture over the top and spread evenly.
  9. Sprinkle with crackers and extra cheese.
  10. Bake 30 minutes.
