Comforting Broccoli Casserole
Ingredients
- 1 lb. fresh broccoli, cut into pieces
- 1 (10.75-oz.) can cream of mushroom soup
- 2 large eggs, lightly beaten
- 1 c. Miracle Whip or Mayo
- 1 ½ c. shredded Cheddar cheese, extra to sprinkle over top
- 1 stick butter, cut into pieces
- Salt, black pepper, garlic powder, to taste
- 1 sleeve Ritz crackers, crushed (1/3 of a 12-oz. box)
- Paprika
Instructions
- Preheat oven 350.
- Spray 13x9” baking dish with PAM.
- Steam broccoli until crispy-tender.
- Transfer to bowl of ice water.
- Mix soup, eggs, mayo, cheese, butter, salt, pepper, garlic powder in saucepan over medium heat.
- Stir constantly, until melted and combined.
- Drain broccoli. Spread in baking dish.
- Pour cheese mixture over the top and spread evenly.
- Sprinkle with crackers and extra cheese.
- Bake 30 minutes.
