Ingredients
  • 1 ½ lbs. ground turkey
  • Olive oil
  • 1 T. tomato paste
  • 1 c. Mexican beer
  • 1 c. dried pinto beans
  • 2 T. chopped canned chipotle peppers in adobo sauce
  • 1 T. ground cumin
  • 1 t. smoked paprika
  • Kosher salt, black pepper
  • 2 green bell peppers, coarse chopped
  • 1 (8-oz.) pkg. dried lima beans
  • 1 large red onion, rough chop
  • 5-6 c. chicken stock or broth
  • 3 c. peeled yams, cubed
  • Garnishes: green onion, cilantro, parsley, sweet mini pepper slices
Instructions
  1. Season turkey with salt and pepper. Saute in large skillet until brown. Break up into crumble sizes.
  2. Transfer to crock pot.
  3. Add tomato paste to the skillet and cook for 1 minute, stir often.
  4. Add beer and bring to boil, stirring to loosen browned bits from bottom of skillet.
  5. Boil 2-3 minutes or until reduced to half.
  6. Stir into crock pot and turkey mixture.
  7. Add beans, chipotle peppers, cumin, paprika, bell peppers, lima beans, red onion and chicken stock.
  8. Cover and cook on HIGH 7 hours.
  9. Stir in yams. Cover and cook on HIGH for 1 hour or until yams are tender.
  10. Taste for seasoning. Serve with garnishes.
