Ingredients
  • 4 (5-6 oz.) salmon fillets
  • Olive oil
  • Salt, red/black pepper, garlic powder
  • 1 t. Chef Paul Prudhomme’s Magic Seasoning, “Seven Herbs”
  • 1 (8-oz.) fresh pico de gallo
  • ½ c. chopped onion
  • ½ of 8-oz. carton of sliced mushrooms
  • ⅓ c. fresh lemon juice
  • 1 lemon sliced
Instructions
  1. Rub olive oil all over fillets. Season with salt, red/black pepper and garlic powder.
  2. Tear heavy duty foil into a size that is big enough to make a packet around each fillet.
  3. Spray PAM on bottom of foil.
  4. Place seasoned fillet onto the foil.
  5. In a bowl, mix the pico, onion, mushrooms, lemon juice and magic seasoning. Mix well.
  6. Evenly divide the pico mixture onto each fillet. Top each with a lemon slice.
  7. Fold the sides of the foil over the fish, covering completely, seal the packets closed.
  8. Place on heavy duty baking sheet.
  9. Place in 400 oven for 25-30 minutes.
  10. Remove from oven and serve.
