Zesty Baked Salmon in Foil Packets
Ingredients
- 4 (5-6 oz.) salmon fillets
- Olive oil
- Salt, red/black pepper, garlic powder
- 1 t. Chef Paul Prudhomme’s Magic Seasoning, “Seven Herbs”
- 1 (8-oz.) fresh pico de gallo
- ½ c. chopped onion
- ½ of 8-oz. carton of sliced mushrooms
- ⅓ c. fresh lemon juice
- 1 lemon sliced
Instructions
- Rub olive oil all over fillets. Season with salt, red/black pepper and garlic powder.
- Tear heavy duty foil into a size that is big enough to make a packet around each fillet.
- Spray PAM on bottom of foil.
- Place seasoned fillet onto the foil.
- In a bowl, mix the pico, onion, mushrooms, lemon juice and magic seasoning. Mix well.
- Evenly divide the pico mixture onto each fillet. Top each with a lemon slice.
- Fold the sides of the foil over the fish, covering completely, seal the packets closed.
- Place on heavy duty baking sheet.
- Place in 400 oven for 25-30 minutes.
- Remove from oven and serve.
