Yummy Yammy Pork Chops
Ingredients
- 6-8 (1 ½” cut) bone-in pork chops, seasoned
- 2 large yams, cubed
- 1 (16-oz.) container chopped onions
- 3 T. minced garlic
- 16 oz. pico de gallo
- 1 (10 ¾-oz.) can Roasted Cream of Mushroom Soup
- 1 (10-oz.) can Ro-Tel
- 1 (6-oz.) can Mushroom Steak Sauce
- 1 packet McCormick Herb Brown Gravy Mix (or your favorite)
- 1 (8-oz.) carton sliced mushrooms
- 2 c. chicken or veggie broth
- 4-6 c. water
- 1 bunch chopped fresh parsley
- Salt, red/black pepper, garlic powder
- Olive oil
Instructions
- In large magnalite pot, heat enough olive oil to cover bottom.
- Brown the seasoned pork chops on both sides. Remove from the pot and put aside.
- Drain off all excess oil.
- Put pot back on heat and saute the chopped onions, garlic, pico and yams. Saute for about 10 minutes. Stir frequently to keep from sticking.
- In a bowl, combine the soup, Ro-tel, steak sauce and gravy mix.
- Add to the pot and mix well.
- Stir in mushrooms, broth and water. Mix well.
- Gently place the chops back into the gravy. Make sure you have enough liquid to cover the chops with about 2 inches of liquid.
- Reduce heat after comes to a boil and simmer for 45 minutes or until chops are tender.
Notes
*****Serve with wild rice, noodles, mashed potatoes or your choice and garnish with chopped parsley.
