Yam Tater Tots
Ingredients
- 3-4 medium yams, pricked with a fork
- PAM
- 4 c. finely crushed sweet potato chips
- ¼ c. grated red onion
- 2 T. butter, at room temperature
- 1 large egg
- Kosher salt, black pepper
- ½ c. Miracle whip or mayo
- 3 T. Sriracha sauce
Instructions
- Preheat oven 400. Bake yams until tender, about 45-60 minutes. Let cool.
- Spray a baking sheet with PAM.
- Peel yams and put in a bowl and mash.
- Stir in 1 ½ c. crushed chips, onion, butter and egg. Season with salt and pepper. Mix well.
- Spread remaining crushed chips in a shallow dish.
- Scoop about 1 T. of the yam mixture into your hands and shape into 1” long cylinder.
- Repeat and you should make about 36 cylinders.
- Roll the cylinders in the remaining crushed chips to coat all sides.
- Arrange on baking sheet and spray with PAM.
- Bake, rotating halfway through, until crisp, about 30 minutes.
- Season with more salt.
- Mix the mayo with sriracha sauce in a small bowl. Serve on side for dipping.
