Wonderful Banana Splits
Ingredients
- 3 T. sugar
- 1 c. sliced almonds
- Salt
- ¼ c. unsweetened cocoa powder
- ¼ c. light brown sugar
- 1 T. light corn syrup
- 1 c. heavy cream
- ¾ c. bittersweet chocolate chips
- 1 T. butter
- ½ t. vanilla
- 2 pts. Each of vanilla and chocolate ice cream
- 8 small bananas, split
- Whipped cream, for serving
Instructions
- Preheat oven 325. Line baking sheet with parchment paper.
- In skillet, combine 1 T. sugar with 1 T. water and cook until sugar is dissolved.
- Add almonds and toss to coat.
- Spread almonds on baking sheet and bake for 10 minutes, just beginning to brown.
- Sprinkle with salt and stir and bake for another 10 minutes longer, stirring once or twice, until golden. Let cool completely.
- In saucepan, combine remaining 2 T. sugar with cocoa powder, brown sugar and pinch of salt.
- Add corn syrup and cream and whisk until smooth.
- Bring to boil for 30 seconds.
- Remove from heat and whisk in chocolate chips and butter until melted.
- Stir in vanilla.
- Scoop vanilla and chocolate ice cream into banana boats and lay the halved bananas alongside.
- Top with fudge sauce, whipped cream and almonds. Serve immediately.
