Ingredients
  • 1 ¼ c. milk
  • ½ c. sugar
  • ½ t. pumpkin pie spice
  • 3 large eggs, lightly beaten
  • 1 (15-oz.) can pumpkin
  • 4 ½ c. challah or other egg bread (cubed into ½” pieces)
  • PAM
  • ½ c. maple syrup
  • ¼ c. toasted, chopped pecans
Instructions
  1. Combine milk, sugar, spice, eggs and pumpkin in a large bowl.
  2. Stir well with a whisk.
  3. Add bread, tossing gently to coat.
  4. Spoon mixture into 8” square baking dish that is coated with PAM.
  5. Cover with foil and chill at least 4 hours.
  6. Preheat oven 350.
  7. Place dish in 13x9” baking pan and add hot water to about 1”.
  8. Bake, covered for 25 minutes.
  9. Uncover and bake another 10 minutes or until knife inserted in center comes out clean.
  10. Serve the bread pudding on a plate, drizzle about 1 T. syrup and 1-2 t. chopped pecans.
Notes
*****You can also add Cool whip or ice cream.
