Warm Pumpkin Bread Pudding
Ingredients
- 1 ¼ c. milk
- ½ c. sugar
- ½ t. pumpkin pie spice
- 3 large eggs, lightly beaten
- 1 (15-oz.) can pumpkin
- 4 ½ c. challah or other egg bread (cubed into ½” pieces)
- PAM
- ½ c. maple syrup
- ¼ c. toasted, chopped pecans
Instructions
- Combine milk, sugar, spice, eggs and pumpkin in a large bowl.
- Stir well with a whisk.
- Add bread, tossing gently to coat.
- Spoon mixture into 8” square baking dish that is coated with PAM.
- Cover with foil and chill at least 4 hours.
- Preheat oven 350.
- Place dish in 13x9” baking pan and add hot water to about 1”.
- Bake, covered for 25 minutes.
- Uncover and bake another 10 minutes or until knife inserted in center comes out clean.
- Serve the bread pudding on a plate, drizzle about 1 T. syrup and 1-2 t. chopped pecans.
Notes
*****You can also add Cool whip or ice cream.
