Ingredients
  • 1 lb. thick-sliced good quality bacon, cut into ½” slices (if you want hickory smoked, etc. just add)
  • 4 T. butter
  • 2 lbs. fresh Brussels sprouts, thinly slice in food processor
  • Salt and black pepper
  • 2 Granny Smith apples, peeled, cored, coarsely shredded and squeezed dry
  • 1 t. thyme leaves
Instructions
  1. In large skillet, cook bacon and stir occasionally, until crisp.
  2. Drain on paper towels. Reserve ¼ c. bacon fat.
  3. In large, enameled cast-iron casserole, melt butter in with bacon fat.
  4. Add sprouts in batches and cook over high heat, stirring until soft but still bright green.
  5. Season.
  6. Add apples and thyme. Cook until apples are warm.
  7. Transfer slaw to platter, scatter with bacon and serve.
