Wacky Bow-Tie Pasta with Shrimp
Ingredients
- 1 c. chopped onion mix
- 1 (8-oz.) pico de gallo
- 2 T. minced garlic
- 2-3 T. fresh basil pesto
- ½ can cream of shrimp soup
- 24 cherry tomatoes, cut in half
- 2 lbs. medium shrimp
- 1-2 (12-oz) Wacky Mac Veggie Bow Tie Pasta (You can use other name brands. These pasta ties are made with different veggies. Nice color and flavor.)
- 3-4 sprigs of fresh basil
- Salt, red/black pepper/garlic powder
- Olive oil
- Fresh grated parmesan cheese, optional
- PAM
Instructions
- Boil pasta in salted water with added 2 T. olive oil. Boil until tender but not mushy. Drain and drizzle more olive oil to keep it from sticking. Hold on the side.
- In large skillet, heat 2-3 T. olive oil.
- Add onion mix, pico, garlic and sauté until tender.
- Add shrimp that has been seasoned with salt, red/black pepper and garlic powder.
- Saute shrimp until they are pink.
- Add the soup. Taste for seasoning.
- Add the hot pasta, slowly to get the right proportion. Some people like more or less pasta. Do what amounts you like. I like to boil my pasta at the end so it is warm to toss.
- Toss the pasta with shrimp mixture. Fold in the cherry tomatoes. Taste for seasoning.
- Spray a casserole dish with PAM.
- Pour mixture into dish. Spread evenly.
- Cover with foil to heat in oven at 350 until hot all the way through. This will depend if you cook right away, or cook once it has been refrigerated.
- Garnish with fresh basil.
Notes
*****You can also serve with fresh grated parmesan cheese on the side if you wish. All you need with this dish is a nice salad and great crusty bread.
