Unique Lasagna Cupcakes
Ingredients
- 3-4 c. of your favorite meat sauce (can be store bought or homemade). You can also use plain marinara sauce and add 1 lb. of cooked Italian sausage, casing removed or your favorite type of cooked meat, etc.
- CHEESE FILLIING:
- ¾ c. shredded mozzarella, plus more for garnish
- ¾ c. freshly grated Parmesan, plus more for garnish
- ¾ c. ricotta
- Salt/black pepper/garlic powder
- 48 wonton wrappers (this is approximately 1 package)
- Fresh basil leaves, garnish
Instructions
- Preheat oven 375.
- Brown and crumble any type of sausage or meat that you are going to add to the sauce.
- Add the sauce and season to taste. Set aside.
- CHEESE FILLING: Stir together the cheeses and season to taste. Add extra pepper. Mix well and set aside.
- ASSEMBLE THE CUPCAKES: Use nonstick cupcake pans and spray with PAM. Place a wonton wrapper in each cup.
- Drop about 1 t. of the meat sauce in bottom of each cup.
- Add 1 T. of the cheese filling.
- Cover with another wonton wrapper. Rotate 90 degrees so that the corners of the first wrapper and second wrapper aren’t right on top of each other. Repeat until you have built three layers.
- Top each with some chopped basil, then another wrapper.
- Finish each cupcake with a spoonful of meat sauce, a little shredded mozzarella and a sprinkle of grated parmesan.
- Pop in oven and bake 20 minutes. Remove from oven and let rest about 10 minutes.
- They should slide right out of the liner.
- Top with more cheese and basil if you like.
