Turkey Arugula and Couscous Salad
Ingredients
- 2 c. water
- 1 t. salt
- 1⅓ c. couscous
- ⅓ c. walnuts or almonds, optional
- ⅓ c. craisins, optional
- Juice from 1 lemon
- Salt, black pepper
- 6 T. olive oil
- 3 carrots, grated
- 1 ½ lb. cooked turkey breast, cut crosswise into thin strips
- 6-8 oz. arugula, remove tough stems, wash and chop
Instructions
- In saucepan, bring water and salt to boil.
- Stir in couscous and craisins. Cover, remove from heat and let stand 5 minutes.
- Transfer to bowl and let cool.
- In small frying pan, toast nuts over low heat until golden, about 5 minutes. Remove from pan and chop.
- In glass bowl, whisk together lemon juice, ¼ t. salt and black pepper. Add oil slowly, whisking constantly.
- Toss the carrots, nuts, turkey, arugula and ¼ t. salt with cooled couscous.
- Toss the salad into the dressing.
Notes
*****You can substitute spinach for arugula or use a combination of both.
