Turkey and Yam Frittata
Ingredients
- 6 large eggs
- 4 large egg whites
- Salt and black pepper
- 2 oz. Gruyere cheese or your favorite cheese
- 1 T. olive oil
- 2 small shallots, minced
- 12 oz. peeled yams or sweet potatoes, diced into ½” cubes
- 2 t. fresh thyme
- ½ t. garlic powder
- ½ t. paprika
- 8 oz. leftover turkey breast, chopped or chicken
- 1 loose cup of rough chopped fresh baby spinach or kale
Instructions
- Preheat oven 400.
- Crack eggs and egg whites in large bowl.
- Add salt and pepper and beat until blended.
- Mix in cheese.
- Heat 10” nonstick oven safe skillet over medium heat.
- Add oil and onions to pan and cook until golden.
- Add yams, thyme, salt, garlic powder, paprika and pepper.
- Cover and cook until yams are crisp and tender.
- Add chopped turkey to skillet and stir to mix well.
- Add spinach and cook until wilted.
- Pour egg mixture into skillet.
- Reduce heat to low and cook until edges are set, about 5-8 minutes.
- Transfer skillet to oven and bake until the frittata is completely set and cooked through, about 10 minutes.
- Remove from oven and cut into wedges.
