Knife Care Tips
When we asked the experts for the biggest mistake that home cooks make when cleaning their knives, they had one clear answer: “Leaving knives soaking in the sink. It’s a one-way ticket to rust, dullness, and a potential horror-movie scene when you reach in blindly,” Carulli summarizes.   Middleton expanded on the dullness issue by explaining that, when a knife is left in the sink, “the blade can hit other steel or ceramic items.  This constant contact dulls the edge, reducing the knife’s sharpness and performance.”
Safety becomes a concern with sink-soaking because “someone could unknowingly reach in and cut themselves. To protect both your knife and yourself, always hand wash it immediately after use, dry it thoroughly, and store properly.”
