Tipsy Pecan Bites
Ingredients
- 8 T. butter, divided
- 6 oz. soft cream cheese
- 1 ½ c. flour
- 1 ½ c. brown sugar
- 2 large eggs
- 1 T. praline liqueur or vanilla extract
- ¼ t. salt
- 1 ½ c. chopped pecans, not too fine
Instructions
- In a bowl of food processor, combine 6T. butter, cream cheese and flour. Pulse until it is coarse crumbs.
- Take mixture and place on floured surface and knead until it comes together.
- Shape into a disc shape, wrap in plastic wrap and refrigerate until firm.
- Preheat oven 325. Spray 12 (mini muffin tins) with PAM.
- In a bowl, with an electric hand mixer, mix 2 T. butter with sugar.
- Add eggs, liqueur and salt. Beat until smooth.
- Stir in pecans.
- Divide dough into 36 equal pieces (about 1 heaping T. each).
- Roll each into a ball and flatten into a small circle.
- Press this into the mini muffin cups.
- Place 1 heaping T. of pecan mixture into each cup.
- Bake until tops are puffy and golden, about 20 minutes.
- Cool in pan and store in airtight container.
