Tangy Green Bean Salad
Ingredients
- 1 lb. fresh green beans or steamer bag of fresh green beans
- ½ red onion, chopped
- 1 T. minced garlic
- 2 T. chopped fresh basil
- 3 T. red wine vinegar
- 3 T. extra virgin olive oil
- Juice of 1 large lemon
- 1 dozen of each (red & yellow) grape tomatoes, halved
- Kosher salt, fresh black pepper
- 1 c. crumbled feta cheese, optional
Instructions
- If using fresh string beans, place in boiling salted water for 1-2 minutes. Drain and place in bowl of iced water. Drain well, pat dry and place beans in large bowl.
- If using the fresh steamer bags, put in microwave for 3 minutes, drain and place in bowl.
- Mix together the red onion, garlic, basil, vinegar, olive oil, lemon juice and tomatoes.
- Season to taste.
- Pour over the green beans. Mix well and season to taste again.
- Add the feta cheese if you desire. You can also use goat cheese or blue cheese crumbles if desired.
- This can be served cold or at room temperature.
