Sweet Potato Gnocchi With Marinara Sauce
Ingredients
- 1 (12-16 oz.) package sweet potato gnocchi
- Olive oil
- Salt
- 1 (24-oz.) jar of good quality Marinara Sauce or homemade
- Black pepper
- Freshly grated parmesan cheese
- Fresh basil, rough chop
Instructions
- Boil the gnocchi following directions on the package. I usually add about 1-2 T. olive oil to my boiling water as well as salt.
- Drain gnocchi and place back in pot.
- Add the marinara sauce and heat over low. Stir gently to mix.
- Season to taste.
- Place in serving dish and top with fresh basil and grated cheese, optional.
Notes
*****I found the gnocchi at Rouse’s in Lafayette, LA. It was a nice change from regular gnocchi. The sweetness of the gnocchi along with the tanginess of the marinara was a hit.
