Ingredients
  • 10-12 unwaxed lemons
  • 1 fifth everclear grain alcohol
  • 2 c. sugar
  • 2 c. water
Instructions
  1. Peel lemons with as little as possible of the white attached. This makes it bitter.
  2. Squeeze lemons for juice to use in lemonade, pies, marinades, etc.
  3. Place the lemon peels in a container with a lid.
  4. Pour the everclear over the peels.
  5. Let this sit in a dark cool place for 10-14 days.
  6. After the 10-14 days, make the simple syrup by placing the sugar and water in a saucepan. Boil until sugar dissolves. Let cool.
  7. Strain lemon-everlear liquid.
  8. Mix small batches at a time, using equal parts of simple syrup and lemon liquid. Adjust to your taste.
  9. Pour into bottles cap with a cork or screw cap and store in freezer.
  10. Serve in chilled small glasses.
Notes
*****Suzie said not to use MEYERS LEMONS. They seem to create more bitterness. You can also use this limoncello in other recipes. See my LIMONCELLO CHEESECAKE SQUARES.
