Stuffed Cherry Bomb Poppers
Ingredients
- 4 strips good quality hickory smoked bacon or maple, diced
- 4 oz. soft cream cheese
- 2 oz. shredded sharp cheddar cheese
- 12 mild or hot marinated cherry peppers, drained, cut and seeded
- 2 eggs, beaten
- 1 c. flour
- 1 c. panko bread crumbs
- Canola oil
Instructions
- Fry bacon until crispy, drain on paper towels.
- Mix bacon with cream cheese and cheese in a bowl.
- Pour oil about 1” deep in frying pan and heat to 350.
- Stuff the cheese mixture into peppers using a piping bag.
- Set up 3 dipping centers: one of beaten eggs, the flour and then the bread crumbs.
- Dredge peppers in flour, then egg, then roll in breadcrumbs.
- Fry until golden brown, flipping sides. Drain on wire rack. Serve hot.
