Ingredients
  • 4 strips good quality hickory smoked bacon or maple, diced
  • 4 oz. soft cream cheese
  • 2 oz. shredded sharp cheddar cheese
  • 12 mild or hot marinated cherry peppers, drained, cut and seeded
  • 2 eggs, beaten
  • 1 c. flour
  • 1 c. panko bread crumbs
  • Canola oil
Instructions
  1. Fry bacon until crispy, drain on paper towels.
  2. Mix bacon with cream cheese and cheese in a bowl.
  3. Pour oil about 1” deep in frying pan and heat to 350.
  4. Stuff the cheese mixture into peppers using a piping bag.
  5. Set up 3 dipping centers: one of beaten eggs, the flour and then the bread crumbs.
  6. Dredge peppers in flour, then egg, then roll in breadcrumbs.
  7. Fry until golden brown, flipping sides. Drain on wire rack. Serve hot.
