Stacked Veggie Sandwich
Ingredients
- CREAMY DILL SPREAD:
- ¼ c. olive oil mayo
- ¼ c. sour cream
- ¼ c. chopped fresh dill
- 1 T. fresh minced lemon zest
- Salt, black pepper to taste
- 1. Whisk together all the ingredients in a bowl.
- 2. Season to taste.
- 3. Refrigerate until needed.
- 8 slices pumpernickel bread
- 2 c. fresh baby spinach
- 8 oz. sliced dill Havarti cheese
- ½ zucchini, cut crosswise in half, thinly sliced lengthwise
- ½ yellow summer squash, cut crosswise in half, thinly sliced lengthwise
- ½ red bell pepper, seeded and sliced into rings
- 1 c. thinly sliced cucumber
- ½ c. thinly sliced red onion
Instructions
- Spread dill spread on one side of each slice of bread.
- Layer: spinach, cheese, zucchini, squash, bell pepper, cucumber, and red onion on four of the slices of bread.
- Top with remaining bread slices. Cut in half.
