Ingredients
  • 2 (15-oz.) cans chickpeas, rinsed, drained and patted dry
  • 2 T. extra virgin olive oil
  • 2 t. ground cumin
  • 1 t. ground coriander
  • 1 t. chile powder
  • 1-2 t. red pepper
  • Kosher salt
Instructions
  1. Preheat oven 400.
  2. In a bowl, toss the peas with all of the above ingredients. If you like them spicy, add more red pepper or even Tabasco.
  3. Spread the peas on a rimmed baking sheet that has been lined with foil and spray with PAM.
  4. Roast for 30 minutes or until slightly crisp and golden brown.
  5. Serve warm or at room temperature.
  6. Store in airtight container or freeze in Ziploc bags.
