South of the Border Onion Rings
Ingredients
- 2 large sweet or Vidalia onions
- 1 c. self-rising flour
- ½ c. self-rising cornmeal
- 1 large egg, lightly beaten
- ½ c. sweetened condensed milk
- ¼ c. club soda
- ⅓ c. minced jalapeno pepper
- Vegetable oil
- Salt
Instructions
- Cut onions into ¼” thick slices and separate into rings.
- Combine flour and cornmeal in a bowl.
- Combine egg, milk, and club soda in a bowl.
- Add the liquid mixture to the dry ingredients. Add the jalapeno peppers.
- Pour oil to 3” depth in heavy Dutch oven and heat to 375.
- Dip onion rings into batter, coating well. Fry a few at a time, until golden brown.
- Drain on paper towels. Sprinkle with salt. Serve immediately with catsup or ranch/blue cheese dressing.
