Snappy Snip Fries
SNAPPY SNIP FRIES
2 lbs. parsnips, peeled and cut into 3 ½” strips
2 T. olive oil
1 t. kosher salt
1 t. pepper
1 t. garlic powder
½ c. grated parmesan cheese
¼ c. fresh parsley, chopped
- Position oven rack to upper third position.
- Preheat oven 425.
- Lightly coat large baking sheet with PAM.
- Place parsnips in large bowl.
- Toss parsnips with olive oil, salt, pepper and garlic powder.
- Spread on baking sheet in single layer.
- Roast for 15 minutes.
- Flip fries and roast until golden brown and tender, 10-15 minutes.
- Sprinkle ½ of parmesan over fries and roast until cheese melt, 1-2 minutes.
- Let fries rest 2 minutes.
- Toss parsnips with remaining parmesan and parsley.
*Use your favorite dipping sauce.
