Savory Pork Chops with Ancho Cream Sauce
Ingredients
- 4 (1/2” thick) boneless pork loin chops
- Salt and black pepper
- 4 slices bacon
- PAM
- ¼ c. Ancho Base
- ¾ c. whipping cream
Instructions
- Season chops and wrap a piece of bacon around each one. Secure with toothpicks.
- Spray PAM on grill which is at 300-350 degrees. Place chops on grill and cook with grill cover on it for about 8 minutes on each side or until done.
- Combine ¼ c. Ancho Base and whipping cream in saucepan, whisk until smooth.
- Bring to boil, whisking constantly. Reduce heat and simmer, keep whisking for 5 minutes or until thick.
- Spoon sauce onto plate and top with pork chop.

ANCHO BASE
Ingredients
- 3 dried ancho chile peppers
- 4 oz. dried tomatoes
- 3 T. minced garlic
- ½ c. chopped onion
- 4 beef-flavored bouillon cubes
- 1 T. dried oregano
- 1 T. brown sugar
- 2 T. Worcestershire sauce
- ¼ c. tomato paste
- 1 ½ c. water
Instructions
- Combine all ingredients in saucepan. Bring to boil, reduce heat and simmer 10 minutes, stirring occasionally. Cool 15 minutes.
- Place in food processor and add the pepper mixture. Process until smooth, stopping often to scrape down sides. Chill up to 1 week or freeze for 3 months.
