Ingredients
  • 1 c. plain Greek yogurt
  • 1 T. chopped fresh mint
  • 1 T. chopped fresh chives
  • 1 T. chopped fresh parsley or cilantro
  • Kosher salt, black pepper
  • 2 c. shredded fresh carrots
  • 2 c. thinly sliced cucumbers
  • 1 medium red onion, thinly sliced
  • ½ c. cooked edamame beans or your favorite peas or beans
  • 4 sheets of soft flatbread, like lavash
  • 2 tomatoes, halved and thinly sliced
Instructions
  1. In bowl, combine yogurt, herbs and season with salt and pepper to taste. Set aside.
  2. In another bowl, combine carrots, cucumber, red onion and beans/peas.
  3. Lay 1 sheet of flatbread on work surface, with long edge parallel to the table.
  4. Spoon about ¼ of yogurt mixture lengthwise down the center of flatbread.
  5. Lay ¼ of tomatoes over the yogurt mixture, then arrange about ¼ c. of carrot mixture over the tomatoes.
  6. Fold 1 side of flatbread over the veggies and roll up to meet the other side.
  7. Secure with a few toothpicks, then cut in half.
  8. Repeat with remaining fillings and flatbread.
  9. Refrigerate until ready to serve.
Notes
*****You can change up veggies, as well as bread (you can even use tortillas or pita breads.
