Roasted Yellow Squash with Sugar Snaps
Ingredients
- 3-4 medium fresh yellow squash, sliced
- 1 (8-oz.) bag fresh sugar snaps
- Sea salt, black pepper, garlic powder
- Red pepper flakes
- Extra virgin olive oil
- Soy sauce
- Juice of 2 lemons
Instructions
- In 9x13” baking pan, spray with PAM.
- Place the squash and sugar snaps in dish.
- Drizzle with olive oil and season with salt, pepper and garlic powder. Mix well.
- Spread veggies evenly in pan.
- Drizzle with soy sauce and pour lemon juice all over. Mix well.
- Sprinkle with red pepper flakes.
- Roast in 350 oven for 15-20 minutes. You want veggies to be tender but not mushy. You do want the sugar snaps to be crispier than the squash.
Notes
*****This is a good combination of textures. Typically squash is softer but he contrast with the crispy sugar snaps is a nice change.
