Ingredients
  • 1 lb. fresh white wax beans, cleaned
  • 1 lb. fresh thin green beans, cleaned
  • 4-6 fresh garlic cloves, sliced in slivers
  • 12 baby or medium Yukon gold potatoes
  • 1 large Vidalia onion, thinly sliced
  • Salt, black pepper, garlic powder
  • Extra virgin olive oil
  • ½ c. fresh lemon juice
  • ¼ c. good quality balsamic vinegar
Instructions
  1. Slightly boil the potatoes until tender but not mushy, in salted water. Drain and set aside. *****See footnote below.
  2. In a large bowl, combine the beans, garlic and onions. Season with salt, pepper and garlic powder.
  3. Place the bean mixture into a roasting pan that is lined with foil. Put enough foil so that you can overlap and seal the beans and potatoes.
  4. Place potatoes on top of the bean mixture.
  5. Drizzle with olive oil and mix well.
  6. In a small bowl, combine the lemon juice and vinegar and drizzle over beans/potatoes. Add a little more salt and pepper. Mix well.
  7. Seal the beans/potatoes with the foil.
  8. Roast in 350 oven for 12 minutes.
  9. Open foil and turn heat up to 400 and let the potatoes brown a bit.
  10. Remove, stir and taste beans for seasoning. Add more if needed.
Notes
*****There are two brands of potatoes that now come in those bags that you can cook in microwave, like the veggie steamers. The companies are: Tasteful Selections and Honey Gold. The Honey Gold are 1 lb. bags that cook in 6 minutes in the microwave. The other brand, Tasteful Selections comes in 28 oz. bags and take 8-12 minutes in the microwave. This one also has a variety offered like the Purple Passion Variety and the Fingerlings in a variety of colors. When I am using the potatoes like in this dish, where they will be cooked some more, I undercook in the microwave. I reduce about 2 minutes. This product is such a time saver and less dishes to wash. Product is very good.
