Roasted Baby Yukons with Corn, Mushrooms, Onions and Bacon Bits
Ingredients
- 1 ½ lbs. of baby golden Yukon potatoes
- ¼ c. bacon bits
- 3 ears of corn, cut corn from the cob
- 1 c. chopped onion
- ½ c. chopped mushrooms
- Olive oil
- Wishbone Zesty Italian Dressing
- Chopped green onions
- Salt, black pepper and garlic powder
Instructions
- Wash potatoes and parboil them in salted water. Do not cook all the way through.
- Drain potatoes and set aside.
- In a baking dish, spray with PAM.
- Combine the onions, mushrooms, corn, and bacon bits. Spread in the baking dish.
- Cut potatoes in half and mix into the baking dish.
- Drizzle with olive oil, Italian dressing, salt, black pepper and garlic powder.
- Mix well and spread evenly in baking dish.
- Garnish with green onions.
- When ready to serve, place in 350 oven for 15-20 minutes until hot. If you don’t want it to get to brown, cover with foil and bake.
