Ingredients
  • 1 ½ lbs. of baby golden Yukon potatoes
  • ¼ c. bacon bits
  • 3 ears of corn, cut corn from the cob
  • 1 c. chopped onion
  • ½ c. chopped mushrooms
  • Olive oil
  • Wishbone Zesty Italian Dressing
  • Chopped green onions
  • Salt, black pepper and garlic powder
Instructions
  1. Wash potatoes and parboil them in salted water. Do not cook all the way through.
  2. Drain potatoes and set aside.
  3. In a baking dish, spray with PAM.
  4. Combine the onions, mushrooms, corn, and bacon bits. Spread in the baking dish.
  5. Cut potatoes in half and mix into the baking dish.
  6. Drizzle with olive oil, Italian dressing, salt, black pepper and garlic powder.
  7. Mix well and spread evenly in baking dish.
  8. Garnish with green onions.
  9. When ready to serve, place in 350 oven for 15-20 minutes until hot. If you don’t want it to get to brown, cover with foil and bake.
