Quick Tomato-Cilantro Rice
Ingredients
- 2 T. olive oil
- 1 T. minced garlic
- 1 t. ground cumin
- 2 c. dry converted white rice
- 2 ¼ c. chicken broth
- 1 (16-oz.) can tomato sauce
- ¼ c. minced fresh cilantro
- Salt, black pepper to taste
Instructions
- Heat oil in saucepan over medium.
- Stir in garlic and cumin, saute 30 seconds.
- Add rice, stir to coat.
- Stir in broth and tomato sauce.
- Bring to a boil.
- Cover rice mixture, reduce heat to low.
- Cook until rice is tender, 18-20 minutes.
- Remove from heat.
- Let rice stand, covered, for 5 minutes.
- Fluff rice with a fork.
- Stir in cilantro and season to taste.
