Peanut Butter Brownie Banana Splits
Ingredients
- BROWNIES:
- 1 ½ c. sugar
- ½ c. flour
- 1 ½ t. baking powder
- 1 ½ t. kosher salt
- 1 lb. bittersweet chocolate, coarsely chopped
- 2 sticks butter
- 4 large eggs
- ½ c. sour cream
- 2 t. vanilla extract
- 1 c. peanut butter
- BANANA SPLITS:
- 1 c. dulce de leche
- 4 firm but ripe bananas, split lengthwise and halved crosswise
- Vanilla ice cream
- Lightly sweetened whipped cream
- Crushed peanut brittle
Instructions
- Preheat oven 325. Line bottom of 13x9” metal baking pan with parchment paper.
- In small bowl, whisk sugar with flour, baking powder and salt.
- In saucepan, stir the chocolate and butter over very low heat until melted. Let cool slightly.
- In large bowl, whisk eggs with sour cream and vanilla.
- Whisk dry ingredients, then the melted chocolate mixture.
- Transfer 2 T. of the batter to a small bowl and stir in peanut butter.
- Scrape the batter into baking pan and dollop the peanut butter over the top and swirl but don’t over mix.
- Bake 45 minutes or until risen and top is lightly cracked and glossy. The brownies will be jiggly.
- Transfer pan to rack and cool, then refrigerate until brownies are chilled, at least 2 hours. Cut into 18 rectangles.
- In large skillet, melt the dulce de leche over moderate heat.
- Add bananas and cook, turning occasionally until heated through.
- Set 8 brownies on individual plates and top with bananas and dulce de leche.
- Spoon ice cream, whipped cream alongside, top with crushed peanut brittle and serve.
- You will have extra brownies.
Notes
*****Dulce de Leche is a combination of milk and sugar that is slowly cooked until it caramelizes and producing a thick, creamy sauce. Can be bought.
