Nutty Pecan Coffee Cake
Ingredients
- 1 pkg. yellow cake mix
- 1 (3.4-oz.) pkg. instant vanilla pudding mix
- 1 c. sour cream
- 4 large eggs
- ⅓ c. canola oil
- 1 T. vanilla or orange extract
- Zest of one orange
- ½ c. chopped pecans
- ⅓ c. sugar
- 1 T. ground cinnamon
- ½ c. powdered sugar and or ½ c. light brown sugar.
- 3 T. orange juice
Instructions
- In large bowl, combine cake mix, pudding mix, sour cream, eggs, oil, zest and vanilla.
- Beat on low for 30 seconds.
- Then beat on medium for 2 minutes.
- Pour into greased 13x9” baking pan.
- Combine pecans, sugar (you can do both powdered or brown sugar or just the powdered sugar) and cinnamon. Sprinkle over batter.
- Cut through batter with knife to swirl the pecan mixture.
- Bake 350 for 30 minutes or until toothpick inserted in center comes out clean.
- In small bowl, combine powdered sugar and orange juice. Mix until smooth.
- Cool cake on wire rack but drizzle the orange mixture over it while cooling.
