Mean Green Collards
Ingredients
- 2-3 large bunches of fresh collards, rinsed well
- Chicken broth
- ½ lb. cured ham hock or salt pork
- 2 c. chopped Vidalia onions
- 2 T. minced garlic
- Salt, red/black pepper, garlic powder
Instructions
- To prep the collards, cut down the large stem and discard the stem. Stack the leaves and cut them crosswise into 1” strips.
- In a large pot, place about 2-3” water or broth.
- Add the onions, garlic and ham hock to the broth, bring to a boil.
- Add the collards and toss with tongs until water comes back to a boil and leaves wilt down into pan.
- Reduce heat, cover and simmer over low heat for about 1 hour or until tender.
- Stir occasionally, checking to be sure there is always some liquid in the pot to keep from burning.
- Taste the liquid for seasoning. Add if needed.
Notes
*****Great when served with homemade cornbread.
