Ingredients
  • 2-3 large bunches of fresh collards, rinsed well
  • Chicken broth
  • ½ lb. cured ham hock or salt pork
  • 2 c. chopped Vidalia onions
  • 2 T. minced garlic
  • Salt, red/black pepper, garlic powder
Instructions
  1. To prep the collards, cut down the large stem and discard the stem. Stack the leaves and cut them crosswise into 1” strips.
  2. In a large pot, place about 2-3” water or broth.
  3. Add the onions, garlic and ham hock to the broth, bring to a boil.
  4. Add the collards and toss with tongs until water comes back to a boil and leaves wilt down into pan.
  5. Reduce heat, cover and simmer over low heat for about 1 hour or until tender.
  6. Stir occasionally, checking to be sure there is always some liquid in the pot to keep from burning.
  7. Taste the liquid for seasoning. Add if needed.

*****Great when served with homemade cornbread.
