Maw-Maw's Fresh Apple Cake
Ingredients
- CAKE
- 1 ½ c. vegetable oil
- 2 c. sugar
- 3 eggs
- 1 t. baking soda
- 1 t. salt
- 1t. nutmeg
- 3 c. flour
- 1 t. baking powder
- 1 t. cinnamon
- 3 c. chopped fresh peeled apples, red or green
- 1 c. chopped pecans or walnuts
- 2 t. vanilla
Instructions
- Mix sugar and oil with a mixer and beat on HIGH for 1 minute.
- Add eggs one at a time, beating after each addition. Beat each for 1 minute.
- Mix the soda, salt, nutmeg, flour, baking powder and cinnamon. Add this to the egg mixture.
- Fold in vanilla, apples and nuts. Batter will be stiff.
- Grease a tube or Bundt pan and pour in batter. Hit pan on counter to get out air bubbles and to make it even all the way around.
- Bake 325 for 1 ½ hours or until tester comes out clean when inserted.
- Make sure you check deep into the cake when testing.
- Remove from oven and let set in pan for 15 minutes before removing and placing on serving dish.
Notes
*****Serve with Cool Whip or ice cream. I like to keep mine in refrigerator. It will keep longer. You can cut into sections or pieces and freeze or freeze whole thing.
