All this wet, wet, wet weather has helped with my selection of a Mardi Gras Costume. I am going as some type of AMPHIBIAN! I noticed I started to sprout GILLS and my TOES ARE WEBBING! Need SUNSHINE!!!!!!!!!!!!!!!!!!

MARDI GRAS is the LOVE OF LIFE. It is the HARMONIC CONVERGENCE of our FOOD, our MUSIC, our CREATIVITY, our ECCENTRICITY, our NEIGHBORHOODS, and our JOY OF LIVING-ALL AT ONCE! Ah yes!
Next week the MARDI GRAS FESTIVITIES will come to an end and the SEASON OF LENT will begin.
I will try and post a meat free menu each week. When I was planning the posts, I had to laugh at the thought, about not eating meat on Fridays, during Lent. I thought, GOD, really does love us Southern people! If he wanted to make things really tough, he would say, “NO SEAFOOD DURING LENT!” Now, that would be a tough penance! Just imagine giving up Crawfish Boils, Crawfish Etouffee, Crab Boils, BBQ Shrimp, Oyster Po-Boys and Fish Fries! Oh yes, that would be so hard to do.
We are so blessed with the abundance of SEAFOOD SELECTIONS, here in Louisiana, and the multitude of ways, of preparing the delicacies of the WATERS!
The thing, that I am most grateful for, is the many opportunities of family and friends to come together and enjoy each other’s company while feasting on these wonderful dishes.
We should always remember, “Never get to BUSY MAKING A LIVING that you FORGET to MAKE A LIFE!” I always try to remember, “There are no MISTAKES, only LESSONS!”
