Lemony Haricot Vert with Grape Tomato Relish
Ingredients
- 1 lb. Haricot vert (or slim green beans, ends trimmed)
- 1 c. chopped onion
- 1 c. yellow grape tomatoes
- 1 c. red grape tomatoes
- 2 T. minced garlic
- 1 (8-oz.) good mild fresh salsa
- Good olive oil
- Kosher salt, black pepper, garlic powder
- 2 T. lemon pepper
- Lemon zest of 1 large lemon
- ½ c. fresh lemon juice
Instructions
- On a baking sheet, line with foil. Preheat oven 425.
- In a bowl, combine the tomatoes, garlic, chopped onion and salsa. Season with salt, black pepper and garlic powder.
- Pour the mixture onto the baking sheet and drizzle with olive oil. Mix with your hands and spread mixture out evenly.
- Bake for 45 minutes to 1 hour. You want the tomatoes to roast and onions to caramelize. Do not burn. Turn oven off and let mixture sit in oven.
- In a bowl, combine the green beans, lemon pepper, lemon zest and lemon juice. Also season with salt, black pepper and garlic powder.
- Remove the roasted tomato mixture from oven. Combine the green beans with them and spread evenly on the baking pan.
- Place in 375 oven and cook until beans are tender. Stir once or twice. This usually takes about 20 to 30 minutes depending on size of the beans.
Notes
*****If you decide to make the roasted tomato dish earlier in the day, just leave in oven until ready to finish dish. You can reheat them in the oven before combining with beans.
