Lemony Fresh Green Beans with New Potato Medley
Ingredients
- 1 (28-oz.) bag of multi-colored small new potatoes
- 1 lb. of fresh French cut green beans or the real thin ones
- Olive oil
- Kosher Salt, Fresh Ground Black Pepper
- Juice of 2 large lemons
- ½ c. balsamic vinegar
- 1-2 sprigs of fresh rosemary
- PAM
Instructions
- In pot, place potatoes and cover with cold water and salt it and bring to a boil. Do not overcook. When slightly tender, remove from heat and drain.
- Place potatoes in casserole dish that is sprayed with PAM. Salt, pepper and drizzle with olive oil and add vinegar and rosemary. Place in 350 oven for 12-15 minutes to finish cooking them.
- Meanwhile, wash and prep string beans. Place in boiling salted water for about 2-4 minutes. Want them crispy but tender.
- Drain. In a bowl, combine the beans with more salt, pepper, drizzle with olive oil and the lemon juice.
- Cover and set aside until ready to serve.
- When ready to serve, combine the potatoes and green beans. Taste for seasoning. I like to add a little more olive oil and lemon juice. Adjust to your taste!
