Lemony Bacon Wrapped Asparagus
Ingredients
- 6 asparagus spears per wrap
- 1 (16-oz.) bottle Wishbone Red Wine Vinaigrette
- Sea salt, black pepper, garlic powder
- 1 (12-oz.) Hormel Microwave Ready Bacon
- ½ lemon per wrap
- Paprika
- Freshly grated Parmesan cheese
Instructions
- Clean asparagus spears and remove tough ends.
- Place spears in a ziplock bag and pour dressing into bag and add salt, black pepper and garlic powder. Let marinade for 8 hours or overnight.
- Drain asparagus. Save marinade for other things you might want to marinade.
- Take the bacon and follow directions on box except only cook for 1 minute.
- Wrap the bacon around 6 spears, if they are pencil-thin, you may want more.
- Take a baking sheet and cover bottom with foil and spray with PAM.
- Lay the wraps on the sheet.
- Take each ½ of a lemon and squeeze the juice on each bundle (that would be ½ on each one). Add a little sprinkle of more salt and black pepper. Garnish with a little sliver of lemon.
- Place in 425 oven and cook 8-12 minutes, or until bacon is done and asparagus are cooked.
- Garnish with fresh Parmesan cheese as soon as it comes out of oven.
