Lady Bug Bites
Ingredients
- 1 box nice crispy crackers
- 1 (8-oz.) container soft cream cheese
- 1 bunch fresh chopped chives
- 2 T. fresh lemon juice
- 1 (4-oz.) pack of smoked salmon, cut into pieces to fit size of cracker
- 1 pt. red grape tomatoes, cut in half and then the end of it with a slit
- 1 can pitted whole black olives
- Fresh parsley, garnish
Instructions
- In a bowl, combine the cream cheese, chives and lemon juice. Mix well until creamy and smooth.
- On each cracker, generously spread some of the cream cheese mixture.
- Place cracker on serving platter.
- On top of the cream cheese, put a single piece of smoked salmon that fits your cracker size.
- On the middle of salmon, place the halved cherry tomato, cut side down. On one end of the tomato, make a little slit to look like the wings of the Lady Bug.
- Take a whole black olive and cut the rounded end to form the head. Place next to the body of the tomato.
- You will use the rounded ends of olives for the heads, so that leaves the middle of olive. Chop these up fine and use as dots on the back of the cherry tomato to look like spots of a Lady But.
- Stick a sprig of parsley under the olive head to make it look like the Lady Bug is eating the parsley.
Notes
***Refrigerate until ready to serve. You can also change up flavor of the cream cheese layer.
