Just Too Good Brownies
Ingredients
- 10 T. butter
- ¾ c. cocoa powder
- 1 ¼ c. sugar
- ½ t. salt
- 2 t. vanilla
- 2 large eggs
- ½ c. flour
- 1 pkg. Oreos (regular or double stuffed)
- 1 c. butter, room temp
- ½ c. brown sugar
- 1 ½ c. sugar
- 2 eggs
- 2 ½ c. flour
- 2 ½ t. vanilla
- 1 t. salt
- 1 t. baking soda
- 1 t. baking powder
- 2 c. semi-sweet chocolate chips
Instructions
- Preheat oven 350.
- BROWNIE LAYER: In medium saucepan, melt 10 T. butter. Add ¾ c. cocoa powder and 1 ¼ c. sugar. Whisk to combine and remove from heat. Add ½ t. salt, 2 t. vanilla and 2 eggs and whisk until fully combined. Mix in ½ c. flour. Set batter aside.
- COOKIE DOUGH LAYER: With electric mixer, cream together 1 c. butter, brown sugar and regular sugar. Add 2 eggs and 2½ t. vanilla, making sure to scrape down sides of mixing bowl. Add flour, salt, baking soda and baking powder. Mix on low until fully incorporated. Fold in chocolate chips. Set dough aside.
- Line bottom of 9x9” baking pan with foil and spry with PAM.
- Layer ½ of cookie dough on bottom of pan, pressing down to form the bottom layer.
- Reserve the remaining cookie dough to be sued to make cookies the next day.
- Layer as many Oreos that will fit over the top of cookie dough. Don’t overlap.
- Pour the brownie batter on top of the Oreo layer and spread evenly on top.
- Bake 30-35 minutes or until toothpick inserted into center comes out clean.
- Let brownies cool before serving. Serve with ice cream.
