Hot German Potato Salad
Ingredients
- 16 or 1 ½ lbs. new red potatoes
- 6 slices bacon
- ½ c. chopped celery
- ½ c. chopped red onion
- 1 T. flour
- 1 T. sugar
- 1 T. Dijon mustard
- 1 t. salt
- ½ t. celery seed
- 1 t. white pepper
- ⅓ c. water
- ¼ vinegar
- 1 bunch chopped green onions
- 1 (2-oz.) jar sliced pimiento, drained
Instructions
- Cook potatoes in salted boiling water that covers them for 15-20 minutes or until tender. Drain and cool. Quarter each potato and set aside.
- Cook bacon in large skillet until crisp. Remove bacon and reserve 3 T. of drippings in skillet. Discard rest of drippings. Crumble bacon and set aside.
- Saute celery and onion in bacon drippings.
- Add flour and next 5 ingredients, stirring until smooth. Cook 1 minute, stirring constantly.
- Gradually add water and vinegar. Stir constantly, until mixture thickens.
- Stir in potatoes, green onions and pimento. Cook until just thoroughly heated. Stir to coat all the potatoes.
- Transfer to serving bowl. Sprinkle with bacon. Taste for seasoning.
