Ingredients
- 1 lb. ground round
- ¼ c. finely chopped onion
- 3 T. breadcrumbs
- 1 egg white
- 2 T. water
- ¼ t. beef-flavored bouillon granules
- 1 t. pepper
- 1 t. salt
- PAM
- 1T. olive oil
- 1 (8-oz.) carton sliced fresh mushrooms
- 1 onion, sliced and separated into rings
- ½ each red, yellow, orange, green bell pepper, cut into strips
- 1 (13-3/4-oz.) can beef broth
- 1 (10-oz.) can Rotel
- ½ can cream of celery soup
- 2 T. Worcestershire sauce
- ¾ to 1 c. water
- Salt, red/black pepper, garlic powder
- Chopped fresh parsley
Instructions
- Combine first 8 ingredients in a bowl. Mix well. Divide the meat into 4 equal portions, shaping each into a ¾” patty.
- In a large skillet, spray with PAM, and place over medium heat. Add patties and cook 5 minutes on each side. Drain on paper towels and keep warm.
- In same skillet, spray with PAM and add olive oil and heat. Add mushrooms, peppers and onion and sauté until tender.
- Add broth, Rotel, soup, Worcestershire sauce, and water and cook 5 minutes, until blended and thickened.
- Return patties to skillet. Cover and reduce heat and simmer 10-15 minutes.
- Taste sauce for seasoning. Spoon sauce evenly over patties with the onions, mushrooms and peppers on top.
- Garnish with fresh chopped parsley.
Notes
*****Serve with roasted garlic mashed potatoes. Any leftover patties make great sandwiches.
