Ingredients
  • 1 lb. ground round
  • ¼ c. finely chopped onion
  • 3 T. breadcrumbs
  • 1 egg white
  • 2 T. water
  • ¼ t. beef-flavored bouillon granules
  • 1 t. pepper
  • 1 t. salt
  • PAM
  • 1T. olive oil
  • 1 (8-oz.) carton sliced fresh mushrooms
  • 1 onion, sliced and separated into rings
  • ½ each red, yellow, orange, green bell pepper, cut into strips
  • 1 (13-3/4-oz.) can beef broth
  • 1 (10-oz.) can Rotel
  • ½ can cream of celery soup
  • 2 T. Worcestershire sauce
  • ¾ to 1 c. water
  • Salt, red/black pepper, garlic powder
  • Chopped fresh parsley
Instructions
  1. Combine first 8 ingredients in a bowl. Mix well. Divide the meat into 4 equal portions, shaping each into a ¾” patty.
  2. In a large skillet, spray with PAM, and place over medium heat. Add patties and cook 5 minutes on each side. Drain on paper towels and keep warm.
  3. In same skillet, spray with PAM and add olive oil and heat. Add mushrooms, peppers and onion and sauté until tender.
  4. Add broth, Rotel, soup, Worcestershire sauce, and water and cook 5 minutes, until blended and thickened.
  5. Return patties to skillet. Cover and reduce heat and simmer 10-15 minutes.
  6. Taste sauce for seasoning. Spoon sauce evenly over patties with the onions, mushrooms and peppers on top.
  7. Garnish with fresh chopped parsley.
Notes
*****Serve with roasted garlic mashed potatoes. Any leftover patties make great sandwiches.
