Homemade Peanut Brittle
Ingredients
- 1 T. vanilla
- 1 T. baking soda
- 1 t. salt
- 1 ½ sticks butter
- 3 c. sugar
- 1 c. light corn syrup
- ½ c. water
- 3 c. shelled raw peanuts
- 1 (16-oz.) bag of chocolate chips or bars, to melt and dip brittle in
- 2-4 T. shaved wax
Instructions
- Measure the vanilla and place in a bowl and set aside.
- Combine baking soda and salt in another bowl and set aside.
- Butter a baking sheet (bottom and sides) with ½ stick butter. Set aside.
- Combine sugar, corn syrup and ½ c. water in a large saucepan.
- Bring to a boil, place a candy thermometer into the mixture. Cook over medium-high heat until syrup spins a thread when poured from a spoon (240 degrees) on the thermometer.
- Stir in peanuts and continue cooking and stirring until mixture reaches 300 degrees and becomes golden brown.
- Remove from heat immediately and quickly add the 1 stick of butter and vanilla, baking soda and salt. Stir only until butter melts.
- Quickly pour onto baking sheet, spreading mixture thinly.
- When brittle is completely cooled, break into pieces or cut into bars. Store in tightly covered container.
- In a double boiler, melt the chocolate chips or bars. Add the wax and stir. Dip one end of the brittle into the chocolate and lay on wax paper until it hardens. I like to do half of them and leave some of brittle without chocolate. You can vary sauces like butterscotch, etc.
