Holiday Wild Rice and Mushrooms
Ingredients
- 2 (6-oz.) pkgs. long grain and wild rice mix
- 3 T. butter
- 1 large Vidalia onion, diced
- 12 oz. assorted fresh mushrooms, trimmed and sliced
- Salt, black pepper to taste
- ½ c. Marsala
- ½ c. chopped fresh parsley
Instructions
- Prepare rice according to pkg. instructions.
- Melt butter in large skillet over medium heat.
- Add onion and cook until golden.
- Add mushrooms and season with salt and pepper. Cook until tender.
- Add Marsala and cook until liquid is absorbed.
- Stir mushroom mixture and parsley into prepared rice.
- Taste for seasoning.
