Good Morning Foodies! I truly hope all of you FOODIES had a most wonderful EASTER CELEBRATION. I had a slight hiccup in my holiday plans. I wasn’t sure if I was able to be here for Easter because my duties were needed elsewhere at the time. My most amazing family all shifted gears and stepped up to the plate and all pitched in. Fortunately, I was able to make it back late Good Friday and jumped right into the activities that needed to be done. HUBBY assured me that he could handle everything in case I didn’t make it back. We all know it is the effort that counts, RIGHT! Anyway, all worked out, except that two of my PEEPS AND FAMILY were not able to attend. Missed them! I am just crazy about this time of year—usually the most beautiful weather, flowers, new life coming into all the little species of creatures (some good and some not, but have to have both)! It is so much fun to watch the little ones gather the eggs for the hunt and the older ones trying their hands at POCKING EGGS! A GOOD TIME WAS HAD BY ALL! As you can see, we are on the back end of this month already. Within the next few weeks, I will try to cram in as much as I can featuring the JAZZ FEST IN NEW ORLEANS, FESTIVAL INTERNATIONAL IN LAFAYETTE, ALL THOSE LOCAL FESTIVALS LIKE THE CRAWFISH FESTIVAL IN BREAUX BRIDGE, CINCO DE MAYO, KENTUCKY DERBY, WEDDINGS, GRADUATIONS, FIRST COMMUNIONS AND CONFIRMATIONS, MOTHER’S DAY, AND MEMORIAL DAY—WHEW—-THIS IS JUST THE BUSIEST TIME OF THE YEAR FOR ME!

I really try to put the brakes on and enjoy each event as they come. Sometimes my perfectionism gets in the way but I have this sign that helps keep me focused:

“LAUGH WHEN YOU CAN, APOLOGIZE WHEN YOU SHOULD, LET GO OF WHAT YOU CAN’T CHANGE, KISS SLOWLY, FORGIVE QUICKLY, PLAY HARD, TAKE CHANCES, GIVE EVERYTHING AND HAVE NO REGRETS—–LIFE IS TOO HSORT TO BE ANYTHING BUT HAPPY!”
