Heavenly Peaches and Cream Pie
Ingredients
- 4 c. fresh peaches, peeled and chopped
- 1 unbaked 9” deep dish pie crust
- 1 c. sugar
- ⅓ c. flour
- ⅛ t. salt
- 2 eggs, beaten
- ½ c. sour cream
- ½ c. sugar
- ½ c. flour
- ¼ c. butter
- 1 fresh peach, sliced for garnish
- Vanilla ice cream
- Fresh mint sprigs
Instructions
- Preheat oven 350.
- Place the 4 c. of chopped peaches into pie crust.
- In a bowl, combine the 1 c. sugar, ⅓ c. flour and salt. Mix well.
- Add eggs and sour cream and blend.
- Spoon mixture over peaches.
- In another bowl, combine ½ c. sugar, ½ c. flour and ¼ c. butter until mixture resembles coarse meal. You can use a pastry blender, or two forks or knives to cut it up.
- Sprinkle the coarse meal over the pie.
- Bake 1 hour or until golden.
- Garnish with fresh sliced peaches and serve with vanilla ice cream and garnish with a fresh mint sprig.
- Refrigerate leftovers.
