Ham and Potato Chip Tortilla
Ingredients
- 1 dozen large eggs
- 1 (5-oz.) bag jalapeno potato chips, lightly crushed
- ¼ c. olive oil
- 1 (1/2 lb.) ham steak, cut into ½” diced pieces
- 3 green onions, chopped
Instructions
- Preheat broiler and put rack about 8” from heat.
- In large bowl, beat eggs. Add chips and mash to break them up.
- In large nonstick skillet, heat olive oil. Add ham and green onions and cook for 1 minute.
- Add eggs and cook until set on the bottom and side.
- Broil the tortilla until top is lightly browned and eggs are set, about 2 minutes.
- Slide tortilla onto a plate and cut into wedges and serve.
Notes
*****Try using the sweet potato chips or other favorite chips for a change up in flavors. Also you can sprinkle with your favorite type of shredded cheese that can be added right at the end while under broiler.
