Grilled Kale with Garlic and Bacon
Ingredients
- 1 lb. fresh kale, thick stems discarded
- 2 T. canola oil
- 2 large garlic cloves, thinly sliced
- 1 small fresh red chile, thinly sliced
- Salt and fresh black pepper
- 2 thick slices bacon, cut into ⅓” pieces
- 1 T. extra virgin olive oil
- Zest of 1 lemon
- 3 T. fresh lemon juice
Instructions
- In large pot of salted boiling water, blanch kale until just tender, about 2 minutes. Drain and lightly squeeze out excess water. Blot dry and transfer to bowl.
- Add oil, garlic, chile and season to taste. Toss to coat.
- In skillet, cook bacon, stirring and cook until crisp. Drain on paper towels.
- On a lighted grill, take the 10” springform pan (just the ring, not the bottom, and place on grill. This will hold the kale together.
- Carefully place kale inside ring. Press down gently to form an even layer. Grill until lightly charred on bottom, about 2-3 minutes. With tongs, turn kale to grill other side.
- Transfer kale to bowl and immediately toss with bacon, olive oil, lemon juice and zest. Taste for seasoning. Serve immediately.

*****Great side for grilled fish or meats. You can also find the perforated grill baskets to do kale.
