Grilled Kale with Garlic and Bacon
Ingredients
  • 1 lb. fresh kale, thick stems discarded
  • 2 T. canola oil
  • 2 large garlic cloves, thinly sliced
  • 1 small fresh red chile, thinly sliced
  • Salt and fresh black pepper
  • 2 thick slices bacon, cut into ⅓” pieces
  • 1 T. extra virgin olive oil
  • Zest of 1 lemon
  • 3 T. fresh lemon juice
Instructions
  1. In large pot of salted boiling water, blanch kale until just tender, about 2 minutes. Drain and lightly squeeze out excess water. Blot dry and transfer to bowl.
  2. Add oil, garlic, chile and season to taste. Toss to coat.
  3. In skillet, cook bacon, stirring and cook until crisp. Drain on paper towels.
  4. On a lighted grill, take the 10” springform pan (just the ring, not the bottom, and place on grill. This will hold the kale together.
  5. Carefully place kale inside ring. Press down gently to form an even layer. Grill until lightly charred on bottom, about 2-3 minutes. With tongs, turn kale to grill other side.
  6. Transfer kale to bowl and immediately toss with bacon, olive oil, lemon juice and zest. Taste for seasoning. Serve immediately.
Notes
*****Great side for grilled fish or meats. You can also find the perforated grill baskets to do kale.
