GRILLED CORN LAYERED SALAD
Ingredients
- 8-10 fresh ears of corn, husks removed
- ¼ c. good quality olive oil
- Salt, black pepper
- 1 t. crushed red pepper flakes
- 1 pt. cherry tomatoes, halved or 2 large tomatoes, chopped
- 1 medium red onion, thinly sliced
- 12 fresh basil leaves, thinly sliced
- 1 c. Zesty Italian dressing
Instructions
- Brush corn with oil. Grill corn, cover, for medium heat 10-12 minutes or until lightly browned and tender. Turn occasionally. Cool slightly.
- Cut corn from cobs and place in bowl.
- Stir in salt, pepper and flakes.
- In 2 qt. glass bowl, layer a ⅓ of each of the following: corn, tomatoes, onion and basil.
- Repeat layers twice.
- Pour dressing over top and refrigerate for at least 1 hour.
