Grilled Bacon-Wrapped Jalapeño Stuffed Pork Tenders
Ingredients
- 1 (8-12 oz.) pork tender
- Salt, red/black pepper, garlic powder
- 4 slices of turkey bacon or bacon of your choice
- ¼ c. or more of diced pickled jalapenos (to fill the cavity of pork tender)
- 2-3 sprigs of fresh thyme
- ¼ c. creole mustard
- ¼ c. Lawry’s Herb and Garlic Marinade
- ¼ c. honey
Instructions
- In a small bowl, combine the mustard, herb and garlic marinade and honey. Mix well and set aside.
- Take the pork tender and slit down the center, but do not cut all the way through.
- Season all sides and inside of slit.
- Spoon the diced jalapenos in the slit.
- Lay the sprigs of thyme on top of jalapenos.
- Wrap the tender with the bacon and secure with toothpicks if necessary.
- Place in a glass dish and pour the marinade over it and marinate for at least 3-4 hours or overnight.
- Let set at room temperature for at least 1 hour before cooking.
- You can cook on outside grill to internal temperature of 135. You can sear in a grill pan and place in 425 oven and cook until internal temperature is achieved. Turn during grilling.
- Remove from grill, let set for 5 minutes and then slice and serve.
Notes
*****You can also do this with the large pork tenderloin. Cooking time will increase because of the size.
