Green Veggie Fried Brown Rice
Ingredients
- 2 eggs
- 1 t. soy sauce
- 1 t. toasted sesame oil
- 1 T. vegetable oil
- 1 T. minced garlic
- 1 t. minced fresh ginger
- 2 c. shredded green cabbage
- 1 c. frozen shelled edamame, thawed
- ½ c. frozen peas, thawed
- 2 c. cooked brown rice, chilled
- 2 T. soy sauce
- 2 green onions, sliced
- Crushed red pepper, optional
Instructions
- In small bowl, beat eggs and 1 t. soy sauce.
- In wok or large skillet, heat sesame oil.
- Add eggs, stir gently until set.
- Remove eggs, cool slightly. Cut eggs into strips.
- In same skillet, heat vegetable oil.
- Add garlic and ginger. Stir and cook 30 seconds.
- Add cabbage and cook 2 minutes.
- Add edamame and peas and cook and stir another 2 minutes.
- Add rice and 2 T. soy sauce. Cook and stir 2-4 minutes or until heated.
- Add egg strips and green onion. Cook and stir 1 minute.
- If desired, top with sprinkles of crushed red pepper.
